Here is a classic decaffineated coffee from the Cauca region of Colombia. It has ample body, a spiced and honeyed chocolate profile, and is enjoyable as either a drip coffee or as espresso. The processing method known as "sugar processed" is gaining popularity--and rightly so: it uses less heat than common water processing methods and therefore keeps more of the flavor and physical integrity of the coffee intact.
