Ethiopia, especially the Sidamo and Yirgacheffe regions, produce many excellent coffees. The Chire Mill's coffee was exceptional this year for its distinguished black tea aromatics that create such a refreshing balance to it's sweet fruity notes. As espresso, this coffee is intense. It's sweet, very floral, and distinctly peachy. With all of our espresso roasts, we develop the coffee a little more (a little darker) which ripens the fruit notes and simplifies/sweetens the coffee to maintain balance and improve the coffee's workability in an espresso machine.
